This Champagne comes from the Dauvergne family located in the Grand Cru village of Bouzy in the Champagne area. The wines are made blending three consecutive years of the base wine, which is 85% Pinot Noir & 15% Chardonnay. The color comes from the blending of Bouzy Rouge wine into the Champagne. This is the most delicate of processes as the desired color is of paramount importance. The shade of salmon pink required is an art form. This wine is suitable as an aperitif, with fish dishes and perfect with dessert. Champagne is very special due to the chalky soils in the region. A specific acidity is desired in the wine, an acidity that tickles your tongue and encourages an appetite. I like Champagnes with tiny bubbles, beautiful toasty flavors, some white flowers, and a little red fruit on the nose in a rose. What I am really looking for is the concept that the wine just graces your tongue and then it vanishes leaving the memories of the occasion with the unforgettable taste of perfection in your mouth.
